Apple, Bacon + Brussel Sprout Hash


Are you team hash? I feel like you either love or hate (ok maybe dislike?) hash! Personally, I am a HUGE hash fan! My favorite thing about hash is that it can be SO versatile, which makes it easy to whip up. For example, I cleaned out my refrigerator this morning (LONG overdue) and had some brussel sprouts I needed to use up and a honey crisp apple on it's last leg. So I decided to chop them up and throw them together with bacon, a few eggs and a sprinkle of goat cheese to make a hash. Eating healthy and delicious food doesn't have to be super hard and long planned out- contrary to what many people think. Sure, sometimes you need to make a list of ingredients you may need for a recipe. But my favorite way to cook? Seeing what I have on hand and using those ingredients to throw together something quick and tasty. This one skillet meal was whipped up in 20 minutes this morning and left me with an unexpected and delicious morning breakfast. My other secret favorite thing about hash? It can literally be eaten any time of the day. Yes, I know there is this big debate on breakfast for dinner (which people also usually love or hate) and personally- I am not on the train of breakfast for dinner in the usual terms. Meaning, I don't want to cook eggs and bacon for dinner. But when it comes to hash, I will eat it all day every day and not complain. It's also SUPER budget friendly because you can throw so many different ingredients in it depending on what you have! And let's face it, with the current state of our economy, we can all use a break on our wallet. So if you haven't given hash a try before, and you're a brussels fan like me, I highly recommend throwing this recipe together soon! Whether for Saturday brunch or a casual weeknight dinner- it works either way. And did I mention what a healthy option this is? Protein, fruit, veggies & the best flavors combined- it's really hard to beat. P.S. It also works great for meal prep for several days a week! :)

 

Serves: 2-3


Ingredients:

  • 1 bag of brussel sprouts, rinsed and sliced

  • 3-4 slices thick cut bacon

  • 1 large apple*

  • 2 eggs

  • 1 tsp dried rosemary

  • 1 pinch kosher salt

  • Cracked pepper, to taste

  • Crumbled goat cheese, to top

Note:

  • Gluten free

  • Dairy free (remove goat cheese)

  • Apple- Choose a tarter and crisp apple, I used honey crisp. You could also use Granny Smith here for an even tarter option. I would not recommend using something like red delicious that is not as crisp.

  • Eggs- you can choose to forgo this option completely or also cook them separate over easy for a runnier egg. Really how you do the eggs are up to you!

Directions:

  1. Preheat oven to 400 degrees (if using eggs, if not can skip this step).

  2. Heat a skillet or oven proof pan on medium heat.

  3. Add the chopped bacon to the pan and sauté for 1 to 2 minutes until slightly cooked.

  4. Add in the brussels and toss to coat with bacon grease. Sauté for 3 or so more minutes and then add the apples and toss again. Continue cooking for about 5 minutes until brussels and apples are softened.

  5. Make two holes in the hash and crack an egg into each. If using for three servings, just add a third egg. Cook for another minute or so and then place in the oven. Cover with foil to help cook the egg faster. How long you leave the pan in the oven depends on how you want your eggs cooked. Personally, I do not eat mine very runny so baked them for about 10 minutes. Cook less for runnier eggs- OR cook your eggs separately how you like them and skip the oven step.

  6. Once finished, remove from oven and top with a sprinkle of goat cheese and/or other desired toppings. If you like spice, a little red pepper flakes would be good here too. Hope you enjoy! :)
