Chocolate Covered Strawberry Cheerio Bars


This one's for the kids (and adults I guess, if you insist). If you had the chance to make my last cheerio bars (Pumpkin Spice Flavored) then you know how easy & delicious these bars are! They are super simple to make in less than 20 minutes and are oh so tasty. This makes them a big payout for just a little bit of your time! And they're also pretty inexpensive. Plus, they make a great treat to make with your kids and/or for kids parties! Don't sleep on these because they will be sure to surprise you if you try them. Your kids will definitely be asking you to make these again so I would get more than one recipe worth! Also- this recipe uses a special edition Cheerios that are in stores NOW for Valentine's Day so make sure to grab them before they go away for the season! I found mine in the Valentine's section of Harris Teeter but they may also be in the cereal isle. Serves: 12


Ingredients:

  • 1 box chocolate strawberry cheerios (special edition, I found mine in Harris Teeter)

  • 1 bag 10 oz mini marshmallows

  • 1/2 stick butter

  • 1 1/4 cups stevia chocolate chips (I uses Lily's brand)

Note:

  • Gluten free

Directions:

  1. Melt butter in a medium pot over low to medium heat. Once melted, add in the marshmallows. Slowly heat until completed melted. Do not heat too high or it may burn.

  2. In a bowl, combine the cheerios and marshmallows. Mix until all cheerios are well coated. Once fully coated, fold in 1 cup of the chocolate chips and mix again.

  3. Spray a medium baking dish or pan with cooking spray and your hands. Alternatively, you can use parchment paper to line the line. Place mixture into the dish and use your hands to push down firmly until it is all packed in the dish.

  4. Combine the remaining chocolate chips with a little coconut oil in a glass dish. Microwave in 30 second intervals until completed melted and mix together. Drizzle the bars with melted chocolate.

  5. Let set for an hour until hardened. You can also place in the freezer to blast the chocolate and quickly harden it. Once hardened, remove from pan and cut into bars. Serve them & enjoy! <3
