Who loves watching the super bowl?! Or are you only there for the food and the halftime show (and only if it's ACTUALLY good)? LOL. I can truthfully say I watch for the game and the food, and sometimes for the halftime show depending on who it is. BUT, this year is lining up to be GOOD if you were a 90's baby like me so I am pretty pumped. And of course, I am ALWAYS in it for the food! Who doesn't love a good buffalo dip?! Honestly, it's one of the easiest appetizers there is and gives a HUGE taste profile for little effort. So in my opinion it's a win win! If you aren't a big spice fan, I think you will still like these because you can adjust the spice content to your liking. Even though I am not a huge spice person, I still find buffalo dip to be pretty tasty! This one is made with greek yogurt for a healthier spin on it. And the added blue cheese gives it an extra tang to it! You can easily customize the dip to your liking by choosing to use one or two cheeses but I tend to like the sour taste of the blue cheese added in. Serve it up with tortilla chips and/or celery for a healthier option! And for an extra special bite you can even drizzle it with some ranch. Either way, this one is going to go FAST! And if you make it mild enough, you can even share with the kids. If, by some chance, to happen to have some left over, I love to snack on it throughout the week with carrots or cucumbers and a drizzle of ranch for a healthier snack option. Ingredients:
1 lb shredded chicken (see note below)
1 cup full fat greek yogurt
8 oz cream cheese
1/2 cup shredded cheese
1/2 cup shredded mozzarella
1/4 crumbled blue cheese
1/4-1/2 cup buffalo sauce (I used Franks brand)
1 ranch packet
Note:
Gluten free
Chicken: I used seasoned chicken breast I cooked earlier in the week which I think gives it more flavor. You can also use canned chicken here but I've found you will need more than called for since much of the canned weight can be from juice. I would shoot for 1.5-2x as many ounces if using canned.
Directions:
Pre-heat oven to 350 degrees.
In a large bowl, combine all ingredients except the chicken and green onions. Stir until mixed well together.
Add the chicken and stir again until well combined. Spray a baking dish and spoon the mixture into the dish. Use a spoon to spread it out evenly. Bake for 25-30 minutes until heated through. At the end, turn to broil for 3 to 5 minutes to brown the top. Careful not to burn!
Garnish with green onions and serve with your favorite tortilla chips and/or celery! Enjoy!
P.S. Don't want to watch the dip in the oven? You could also combine these ingredients and heat on low in the crockpot for an hour or so until warmed through. The main difference would be that you would not get the browned top but it would still be tasty!
