I know, the name sounds counter intuitive right? Healthy AND chocolate chips? I know you are thinking where is the catch?! But this banana bread truly is a healthier snack. Not all foods have to be bad for you if they are sweet or have chocolate in them. We all derisive a treat now and again and this one lets you still feel good about yourself! It's combined with deliciously overripe bananas which really gives it the sweetness, combined with cinnamon flavoring and stevia chocolate chips. And let me tell you, you sure do not feel like you are eating healthier. It's absolutely delicious and melts in your mouth! And when you wash it down with a cold glass of milk? It hits the spot juts right for me. See, I am a firm believer in eating wholesome foods that also taste GOOD. This recipe checks all those boxes! And it's perfect to make at the beginning of your week to eat on for the rest of the week! I think even your kids are going to love this one. I'll let you in on a secret- my husband HATES bananas. Like it is the one food on this planet that he is VEHEMENTLY against eating. I'm not quite sure what bananas ever did to him.... but it must have been bad HAHA! But even still, he enjoyed his tasty slice of this today. The banana isn't overly powering in this but just enough to get a hint, with the other delicious flavors of cinnamon, chocolate, and coconut. Serves: 8
Ingredients:
2 very ripe bananas
2 eggs, at room temperature
1/4 cup creamy almond butter (or favorite nut butter)
2 tsp vanilla
2/3 cup coconut flour
3/4 teaspoon baking soda
1 big pinch of kosher salt (1/4 tsp)
1 tsp ground cinnamon
1/2 cup semi-sweet chocolate chips made with stevia (I used Lily brand), more to top
Directions:
Preheat oven to 350 degrees.
Line a loaf pan with parchment paper and spray with cooking spray.
Combine bananas, nut butter and vanilla and mix until creamy and well combined (you can use a stand or hand-held mixer).
Slowly add in each egg until well combined.
Next add in the coconut flour, baking soda, salt and ground cinnamon and mix until well mixed.
Lastly, slowly fold in the chocolate chips. Spoon into loaf pan and spread evenly using a spoon. Sprinkle top with more chocolate chips.
Bake for 25 to 35 minutes until fully cooked. You should be able to stick with a pick and it should come out clean once fully done.
Remove from oven and let cool about 20 minutes. Then carefully remove from pan and let cool an additional 15 minutes or so until almost fully cooled. Serve it up with a cold glass of milk for a health breakfast or snack! Enjoy :)
