Healthier Peanut Butter Cup Hearts


Roses are red, violets are blue, stevia is sweet, and so are you! If you love peanut butter cups as much as me, then you should DEFINITELY be excited about these! Similar to my previous peanut butter cups, this recipe is very simple and easy to make. The main difference with these is the chocolate, which is sugar-free and made with stevia! Now, I can eat my favorite sweet snack and not feel quite as bad about it! With these, only real ingredients are used and the sweetness comes from honey and chocolate chips that are made with stevia. And the vanilla flavoring gives it an added bit of flavor that really seals the deal! Trust me, once you make these you'll never go back. They really are that good! So grab these ingredients and make yourself (or the kids) some healthier treats for Valentine's Day. The only thing you'll regret is not making them sooner, and not making enough! Your Valentine is sure to be asking for more in no time. <3

 

Ingredients:

  • 12 oz stevia milk chocolate chips (I used Lily's brand)

  • 1/2 cup creamy peanut butter (make sure ingredients are only peanuts and/or salt; it should be sugar-free)

  • 1/3 cup honey

  • 2 tbsp coconut oil

  • 1 tsp vanilla flavoring

  • sea salt

Note:

  • Gluten free

  • Nut butter: if desired, may use other form of nut butter.

Directions:

  1. Melt chocolate and 1 tbsp of the coconut oil in a glass bowl for 30 seconds. Stir and then microwave at 15 second intervals until melted.

  2. Use either a heart shaped silicone muffin pan (I got mine from target) or you can use a circle one if desired. Important: if not using silicone, make sure to use liners in the cups. Place a thin layer of chocolate in each cup until completely coated on the bottom. Place in freezer for 5 minutes to set.

  3. While waiting, combine the peanut butter, honey, coconut oil, and vanilla in a glas bowl. Heat for 30 seconds or so until completely mixed and one consistency. Remove cups from freezer. Spoon peanut butter mixture into cups and beat pan slightly to even out the layer. Place in freezer for 5 minutes again to set.

  4. If needed, reheat chocolate to melt again. Remove cups from freezer and spoon remaining chocolate into cups for the top layer. Lightly beat pan to even out layers. Sprinkle with sea salt. Place back in freezer for 30 mins to an hour for final set. When ready, remove from freezer and let sit until soft enough to eat. Store remainder in fridge until ready to eat.

 

How do you celebrate Valentines Day?! Personally it depends on the year for us. Some years we keep it super casual and make dinner together at home. Some years I'm also working (hello life of a healthcare worker!). But this year we are trying a new restaurant and I'm very excited about it!
