Healthy Banana Chocolate Chip Cookies


Are you a cookie or brownie person?! I feel like you usually prefer one over the other, even if you like both. If you are like me who isn't a huge fan of sweets, I tend to lean into cookies. For me, they tend to be less sweet (or at least can be made that way) and not as much to eat as a big brownie square. I also love the gooey centers of cookies! I'll tell you a secret, my husband LOVES cookies. Seriously, we actually call him the Cookie Monster. Contrary to my less than sweet tooth, he is a HUGE sweets person. Like, if it is sweet and it is in the house, he WILL eat it! So I have to be extra careful about what I leave laying around if it's for an event or work because it'll disappear sometimes. LOL. That being said, I actually made these cookies with him in mind. I mean, kind of. He actually isn't a huge fan of bananas. That's an understatement, he pretty much hates them. BUT, I have been able to sneak them into some sweets that he will eat and actually like! For these, I wanted to make a healthier cookie that you could snack on and not feel guilty for eating. Because it's all about BALANCE, right?! I am really working on finding the best balance this year in my diet. By eating healthier, nourishing foods that cleanse my body and fulfill my needs and do not drag me down. Sure, I splurge some, but not ALL the time. I am finding more and more ways to incorporate healthier snacks into my diet that allow me to feel fulfilled without eating terribly. And these cookies are perfect for that! They are filled bananas, peanut butter, oats and some delicious chocolate chips that are made with stevia to keep them extra healthy. Think- super gooey yummy cookie but still not bad for you. Get it? It's the best of both worlds! Highly recommend whipping these up soon. Easy prep, little clean up and takes less than 30 minutes! This would also be an easy recipe to get your kiddos involved in the kitchen with you. Have fun & enjoy! :)

 

Serves: 20


Ingredients:

  • 2 large ripe bananas

  • 2 cups oats

  • 1/2 cup creamy peanut butter of choice (or alternative nut butter; use sugar free for extra healthy)

  • 1/4 cup chocolate chips of choice ( used Lily's Milk Chocolate Chips made with stevia to keep it extra healthy), extra to top

  • 1 tbsp honey (optional for added sweetness)

  • Pinch of sea salt, more to top

Note:

  • Gluten free

  • Dairy free (leave out chocolate chips or substitute dairy free)

Directions:

  1. Preheat oven to 350 degrees.

  2. Mash bananas in a bowl. Add the peanut butter and honey (if desired) and stir until completely mixed.

  3. Add the oats, salt and chocolate chips and mix well.

  4. Cover a baking sheet in parchment paper. Use a cookie scoop or spoon to place cookie scoops onto the pan. Afterwards, use a fork to flatten each scoop. Optional: Top each cookie with a few extra chocolate chips.

  5. Bake for 10-12 minutes until njjj and beginning to brown on top.

  6. Remove from oven and let cool for 10 to 15 minutes before serving. Enjoy!

*Note: Store in air tight container in the fridge for 1 to 2 weeks or freeze the remainder for up to 2 to 3 months.
