Kale Chips


Oh Kale yeah! Are you a lover of kale? If not, it's okay. But, you really should be. Here are the reasons why: 1. It's delicious. By itself, in soup, in hash, etc. 2. It's packed FULL of Vitamin K (more than 600 percent of your daily allowance per serving). 3. It's beneficial for BRAIN + BONE health. 4. It supply's vitamin C, vitamin A AND calcium. 5. It also packs a punch of omega-3 fat, alpan-linoleic acid (This is GOOD fat!). 6. It also contains tons of phytonutrients, which are essential in the body for detoxing. Long story short: kale makes for a SUPER nutritious ingredient in almost anything you can make. So why aren't we using it more?! I tend to think it's sheerly due to the lack of knowledge about it and recipes you can use it in. Personally, I did not grow up eating kale. My family ate dinners that mainly consisted of a meat, vegetable and potato of some kind for dinner. But there are so many recipes you can sneak it in without even being able to tell! For me, I love to let the kale shine. Whether it is these kale chips or white bean kale soup, I am all in. And these kale chips? Do not sleep on them yall! If you love a good crunch and are a garlic lover like me, then you definitely need to make these for snacking asap! They are garlicky, salty and oh so crunchy. Trust me! So good.

 

Ingredients:

  • Half a bunch of kale

  • 2 tbsp avocado oil (this is important!)

  • 1 tsp garlic powder

  • Pinch of kosher salt

  • Red pepper flakes, optional


Note:

  • Gluten free

  • Dairy free

  • Avocado oil- for best results do not substitute, works best due to high heat point.


Directions:

  1. Preheat oven to 450 degrees.

  2. Wash and dry kale very well. If not dry it will not crisp up!

  3. Tear kale into 1-inch pieces or so, removing the vein in the middle. Place pieces in a large bowl.

  4. Drizzle with avocado oil, garlic and salt. Mix well and massage until fully coated.

  5. Spread parchment paper evenly on a sheet pan. Spread kale evenly on pan, keeping as much space possible between pieces. Do not overlap or it will not crisp up.

  6. Bake 6-10 minutes. This will vary based on how hot and even your oven cooks. It took mine right at 11 minutes to achieve the crunch. You should NOT turn the broiler on. The pieces will crunch over time, and may brown a little bit but should not burn. Start checking them about every minute after 6 minutes until desired crispiness achieved. Let cool and snack on immediately for best crispiness! For an extra punch: sprinkle with red pepper flakes.
