Sheet-pan Greek Chicken Dinner


If there is one thing I love, it's sheet pan dinners! This Sheet-pan Greek Chicken dinner involves two sheet pans- but that's okay. Especially if you are using parchment paper and the pans require zero washing. Say what?! I am all about some easy dinners. And let me tell you, this dinner was AMAZING- so much so that I ate it five days in a row for meal prep. Yes, you can easily turn dinners like this into meal prep if you aren't cooking for a whole family. So if it's only you, no need to worry! I got you. This recipe has SO MUCH flavor in it, and is truly an essence of spring in my opinion. All of the spices combine with lemon really meld together in this recipe and the crispiness of the chicken and potatoes really seals the deal. Add some tzatziki sauce, and it's the cherry on top! If you ask me, sometimes simple dinners are best and while this one may seem simple, the flavor profile alone will keep you coming back for more. And the fact that you have very little dishes to wash! That is ALWAYS a plus in my book. So grab some fresh dill and lemons from the store, you likely already have the other ingredients in your pantry. This dinner is going to be one of your go to's if you're like me. Serves: 6

Ingredients:

Chicken:

  • 6 bone in chicken thighs

  • 2 tbsp EVOO

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1 tsp paprika

  • 1/2 tbsp fresh dill, chopped

  • 1 tsp kosher salt

  • Cracked black pepper

Potatoes:

  • 5 medium golden potatoes, sliced into approx. 1/8 inch wedges

  • 1/3 cup chicken broth

  • 1/4 cup EVOO

  • 2 lemons, juiced

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1/2 tbsp fresh dill, chopped

  • 1 tsp salt, more to taste

  • Cracked black pepper

Asparagus:

  • 1 brunch of asparagus

  • 1/2 lemon, juiced

  • 1 tbsp EVOO

  • Kosher salt, to taste

  • Cracked black pepper

Note:

  • Gluten free

  • Dairy free

  • Whole30 approved


Directions:

  1. Preheat oven to 400 degrees.

  2. Combine ingredients for potatoes into a large bowl. Toss the potato wedges into the bowl and mix until well coated. Cover a sheet with parchment paper. Spread these out on a sheet pan, giving them as much room as possible. Place in the oven for 1 hour, flipping about every 20 minutes (this will make them extra crispy!)

  3. While potatoes start baking, fix your chicken. Using the same bowl as the potatoes (hello less dishes!), add your chicken to the bowl. Add the EVOO followed by the spices. Then mix well, using your hands! This is going to ensure the chicken thighs are very well coated. You can use gloves if desired. On another sheet pan covered with parchment paper, add the chicken and spread them out evenly. Place in the oven at the 20 minute mark when you are flipping your potatoes.

  4. Rinse the asparagus and remove the woody ends. Then chop in half or thirds depending on their length. Place in a bowl and toss with ingredients. Once the chicken has been cooking for 20 minutes, remove the pan from the oven and add the asparagus around the chicken. Place back in the oven for 20 more minutes.

  5. In total, the potatoes should cook for 1 hour, the chicken for 40 minutes and the asparagus for 20 minutes. At the end of this time, turn to broil and let broil a few minutes to help with extra crispiness. Caution not to let burn. Remove from oven, and add the chicken and asparagus to the potato plan to serve up dinner.

 

Eating healthy doesn't always mean giving up things you love, or eating plain, unflavored food. In fact, some of my most delicious eating has been healthy dishes that have been FILLED with tons of flavor and spices. These meals may not always be quick and easy like fast food, but you can often make VERY yummy dinners in not as much time as you would think- and they will be meals that leave you wanting more.
