Chicken Cheese Ball


Do you have a recipe that's been passed down through your family? Usually these are cake recipes, some famous casserole, etc. But one of my favorites is this chicken cheese ball recipe! It's super simple, but so very good. It's probably one of my favorite appetizer recipe for both reasons! I remember growing up my grandmother made this for many family gatherings and events, as well as my mother. It was always an appetizer that everyone loved and look forward to. I like to think I'm carrying on the tradition and keeping my grandmothers memory alive. And hopefully, I'll have someone to pass the recipe on to some day too. Ingredients:

  • 1 large can white meat canned chicken, drained

  • 2 8-oz cream cheese

  • 1 half sweet or yellow onion, minced fine

  • 1 cup chopped pecans

  • 1/2 - 1 tsp seasoning salt

  • 1/2 tsp garlic powder

  • Crackers to serve with


Directions:

  1. Bring cream cheese to room temp or slightly warm if straight out of the refrigerator.

  2. Combine cream cheese, chicken, onion, and spices in a bowl and mix well. Place in fridge or freezer to harden up.

  3. Once a little more firm, use your hands to form into a ball. Wrap in serran wrap and mold even more into a ball. Now place in freezer to really firm up.

  4. Once very firm, remove from freezer. Spread pecans on a plate and roll the cheese ball until fully coated with pecans. Wrap back up and store in fridge until ready to serve.

  5. Optional: To make it extra festive for the holidays, use 2 pretzels, 2 black olive slices and the tip of a grape tomato to make Rudolph the reindeer!
