CRISPY SWEET POTATO WEDGES


Next time you need a quick and healthy side to go with your favorite lunch sandwich or for your family burgers and hot dogs night, look no further! These wedges are crispy with a sweet middle and oh so delicious. Especially when paired with a dollop of the cilantro lime dressing in my previous post (click here if you missed it)! Quick and super simple. Enjoy!

 

Serves: 3 to 4 servings


Ingredients:

  • 2 large sweet potatoes

  • 2 tbsp EVOO

  • 1 tbsp Italian seasoning

  • Sea salt, to taste

  • 1 tbsp fresh parsley, chopped (for garnishing)

Directions:

  1. Pre-heat oven to 450 degrees. Cover a baking sheet with parchment paper.

  2. Wash and scrub sweet potatoes. Slice into thick wedges.

  3. Place sweet potatoes on sheet. Drizzle with EVOO and add Italian seasoning. Using your hands, mix together well to make sure potatoes are fully coated with oil. Sprinkle with sea salt.

  4. Bake for 20 minutes, making sure to flip the potatoes halfway through. Once the time is up, turn to broil for a few more minutes until crisped up but do not let them burned.

  5. Remove from oven and top with parsley and extra sea salt if desired. Serve them with your favorite sandwich, wrap, etc.
