I'll keep this one short and sweet y'all! If you haven't tried the other versions of my energy balls, you should definitely add them to your list of healthy treats to keep around. One of my favorite parts is that you can freeze them for later! Makes it a simple healthy snack to keep around, especially if you have kids. I must say, the original cinnamon flavor is high up on my list. And the lemon poppyseed? Such a good one for summer! But I think you're going to like this latest rendition personally. This one is all Fall flavored with pumpkin spice and everything nice! They have a subtle sweetness from the maple syrup and tons of spice flavors that are perfect for fall. They aren't overwhelmingly pumpkin flavored, which I honestly like about them- but you can always add more if desired! Can I make a personal recommendation? I would at the VERY LEAST, double the batch- because they aren't going to last long. Even more so if you have kids, ha! Trust me :) Hope you enjoy! Happy Fall Y'all!
Serves: 12
Ingredients:
1 cup old fashioned oats
1/3 cup roasted pecans
1/4 cup pumpkin purée
3 tbsp maple syrup
1/2 cup ground flaxseed
1 tbsp chia seeds
2 tsp pumpkin spice
Pinch sea salt
Note:
Gluten free
Dairy free
Directions:
Combine ingredients in a food processor if you have one. If not you can mix in a bowl if the pecans are already chopped. I prefer using the processor personally! Process until well combined and mixed together. Taste and add more spice or maple syrup if needed for desired consistency or taste.
Line a cookie sheet with parchment paper. Use a one inch cookie scooper or tbsp to scoop each ball. Roll around in hands to form a ball. Place flat on the pan. Refrigerate for 30 or so minutes to firm up. Then enjoy!
Note: Can freezer for later in freezer safe zip loc if desired.
