Who else is pumped that it is FINALLY soup season?! Personally, I’m a huge soup fan. That’s even a slight understatement. I love all forms of hot soups, be it a hearty soup full of meat and veggies, a smoothly blended soup with tons of flavor, or a deliciously flavored broth to sip on. To me, soup speaks to the soul and provides a calming aura. This is perhaps one of my favorite things about soup. It is also super versatile! You can literally throw any type of meat in with any kind of spare veggies that you have on hand and add some broth or soup base and you can call the concoction a soup. This soup is a personal favorite of mine, and a recipe by my fiancé, Alec. The first time he made this for me, I wasn't feeling that great and really wanted a comforting soup- and he delivered! It's made with rich, flavorful bone broth and full of sausage, white beans, and kale (Kale yes!). It's also made with local ingredients. The sausage we used was venison that was prepared by Stancil's Wild Game, located in Ayden, NC, which is a local processor that we use to supply us with link sausage, ground sausage, burger meat, and more from our venison each year. If you are into wild game and local to the area, you should definitely check them out! Our onion is also locally sourced from a farm in Aurora, NC called Flatland Ag, Inc. This soup is sure to give you comfort when you're under the weather or when you just want to warm up on a cool night. I hope you like it!
White Bean, Sausage & Kale Soup
Serves: 4-5
Ingredients:
1 32 oz carton of chicken flavored bone broth
1 lb link sausage of your choice (we went with venison)
4 strips thick bacon, chopped
1.5 cups sliced mushrooms
1 medium diced sweet onion
1 can great northern beans
1 can cannellini beans
1 bunch of chopped or torn kale
3 cloves fresh minced garlic
2 tsps rosemary
1 tsp thyme
2 tsp salt, or to taste
5 cranks of pepper

Directions:
Cook the sausage link of your choosing thoroughly. We chose to go with venison that we had in the freezer. We seared the entire link at once to give it a good crisp on each side and then sliced it once cooked. Set aside until later.
Chop your bacon and place into a medium sized pot over medium heat for about 5 minutes until bacon starts to create some grease.
Add in minced garlic with the bacon and cook for 1 to 2 min until garlic is fragrant.
Next, add the onion and mushroom and cook until the onion is translucent, about 4 to 5 min.
Season salt and pepper, you can always add more at the end to taste.
Add white beans, sausage, rosemary, and thyme. Stir well to incorporate ingredients. Cook for about 5 min to let the flavors blend together.
Add in the bone broth and stir well. Let simmer for about 20 minutes.
Add the chopped kale, stir in and let cook for a few minutes.
Serve it in your favorite soup bowls.
