Who else grew up eating no-bake cookies?! They have definitely always been one of my favorite cookies. And now that I am gluten-free, even more so! Now I do not eat cookies often (ahem, mainly due to my gluten intolerance) but also because we try to eat on the healthier side and sweets have never been my guilty pleasure. Well at least not cookies anyways! That's my husband, and why he's also know as the Cookie Monster. :) But these cookies are a healthier rendition on this classic and make me feel much less guilty for enjoying them! They are dairy free, gluten free and refined sugar free. I made these with peanut butter but you can substitute any cream nut butter if needed to avoid peanuts. And they are sooooooo simple to make! Altogether taking maybe 20 minutes of hands on time. I also think they would be the perfect recipe to make with your little ones in the kitchen! I don't have kids, but my nephew LOVES all things in the kitchen and I really can't wait to start making recipes like this with him. Just think, no flour, no mess! These will be the perfect treat to serve your house guests this holiday season. I hope they bring you joy like they did me!
Serves: 16-20 (depending on cookie size)
Ingredients:
1 1/4 cup rolled oats (Make sure certified GF if needed)
1/2 cup creamy peanut butter (can you use any creamy nut butter here!)
1/4 cup honey
1/4 coconut oil (in solid form)
2 tbsp cacao powder
1/2 tbsp vanilla flavoring
1/2 tsp sea salt, more to top if desired

Dairy free
Refined sugar free
Directions:
Melt the peanut butter, honey, coconut oil and salt together until fully combined. Careful not to overheat and burn. Once melted, add the vanilla flavoring and cacao powder and mix. Remove from burner.
Place rolled oats in a bowl. Add the melted mixture to the oats. Mix well until fully coated.
Using a spoon, spoon mix into balls and then press onto pan. If you want to make them larger, use two spoon fulls but know that this will decrease your cookie quantity.
Place in refrigerator or freezer to harden. Serve cool or refrigerated to keep consistency. Store in fridge for up to 7 days until ready to eat. Enjoy! :)
