Pumpkin Spice Cheerio Bars


Okay guys, I'm officially back and ready for ALL Fall things!! We had the BEST time on our Hawaii Anniversary trip and hopefully I'll get around to doing a post with all things Hawaii- most especially the good & local food spots! BUT, I have very much missed my Fall foods to go along with this cooler weather we are having. JUST KIDDING. About the weather I mean! It seems North Carolina is doing it's classical "here's a little bit of Fall weather to tease you but now I'm going to give you summer again routine." So typical! But you know what's not typical? This tasty treat! Do you love Cheerios, pumpkin, and white chocolate? All of the above? I thought so! Enter, pumpkin spice Cheerio bars. They're similar to your typical rice crispy treat, but so NOT typical. They are sweet, full of pumpkin spice, and absolutely delicious! And one of the best parts? They are SUPER easy! Seriously, it's only 5 simple ingredients. It's the perfect quick recipe to make this Fall for your kids to munch on during the weekend, for classroom parties or just because! You'll definitely want to add these ingredients to your shopping list for this weekend! TRUST ME, your whole family is going to thank you for this one. You'll be scoring extra brownie points for these! Or stars. However you keep track of things these days. Just do yourself a favor, and pick up enough ingredients to make a double batch. You are going to need it! :)

 

Serves: 24 squares


Ingredients:

  • 1/2 stick butter (4 tbsp)

  • 7 cups pumpkin spice cheerios (almost a full box, minus some munching sessions)

  • 1 package mini marshmallows (10.5 oz bag)

  • 1.5 cups white chocolate chips

  • 1 tsp pumpkin spice (extra to top)


Directions:

  1. Spray a 9x13 baking dish with cooking spray and set aside.

  2. Heat butter over low to medium heat. Once melted add in marshmallows and stir. Cook until full melted. Stir in pumpkin spice and remove from heat.

  3. Combine the cheerios and marshmallow mixture in a bowl and stir until fully coated. It's going to get STICKY. and that's okay. Once fully coated, fold in 1 cup of the chocolate chips.

  4. Pour mixture into baking dish. Spray your hands with cooking spray. Then pat down mixture into dish until it is packed in well and level.

  5. Melt the remaining chocolate chips. Place in microwave safe bowl and microwave 15 seconds at a time until fully melted. If needed, add a small amount of coconut oil to mixture to help with consistency. Once fully melted, use a spoon to drizzle over top of bars. Lastly, lightly sprinkle with some extra pumpkin spice for some add flavor and color. Let bars rest for one hour to firm up. If needed, blast in freezer at the end to help chocolate set. Cut into 24 bars. Serve them up!
